Cynara cardunculus (NOT to TAS)
A stunning architectural plant with jagged grey leaves grows up to 150-250cm tall and produces long, lavender purple thistle-shaped flowers which bloom in late summer & autumn. This beauty is perfect for the daring gardener! It prefers warm summers or a protected spot. Regular fertiliser will keep it growing beautifully all year round.
Cardoon has a similar flavour to artichoke when boiled (not for eating raw). The midrib and leaf stalks are both commonly used in side dishes, additions to stuffing or soups. It must be blanched before it can serve these purposes, so tie up the vegetable firmly with black plastic wrap/newspaper if you want your dish to look nice while still being delicious!
Sow in spring after frost at 10mm deep, 150cm apart. Germination in 2-3 weeks at 21-28°C. Harvest after 60-75 days; plant height 100cm, Hardy Perennial.
