Yacon (Sweet Root) is a herbaceous perennial that grows up to 2 meters tall. It is hardy in most climates and easy to grow, though it dies down in winter. Related to the sunflower family, its edible tubers are sweet, white, and crunchy. You can eat them fresh, sliced in salads, or baked/steamed. Available from June to December. Sold as bare-rooted rhizomes.
To plant yacon, begin by covering a large rhizome with multiple sprouts with soil at a depth of 3 cm. Mulching is recommended. Space apart 0.5m as the plants are of substantial size and vigorous nature. Yacon can be cultivated throughout the year in regions unaffected by frost, owing to its day-length neutrality. In colder regions of Australia, initiating the growth of rhizomes in styrofoam containers within a greenhouse or on a warm verandah and subsequently transferring them to the ground once the frost has subsided is prudent. The plant requires a period of 6 to 7 months to attain full maturity.
