Being the importer of our own product, and partaking in the farming process, we select only caviar of specific quality that is chosen specifically for us. We source caviar from various farms
from all over the world. Every sturgeon looks different and every sturgeon caviar tastes differently. Some sturgeon produces caviar quickly, and farmers extract the caviar too quickly. The result of this is usually soft or mushy caviar. Older fish produces larger and firm roe, if all farming steps have been observed, however this comes at a price.
