BERRY BANANA BREAD
Vegan
Ingredients:
2 Ripe Bananas Mashed
1 tbsp White Vinegar
1 tsp Baking Soda
1 tsp Baking Powder
100ml oil
125g Self Raising Flour
75ml Water
Handful of Frozen Berries
50g Desiccated Coconut
Method:
- Mash the banana and add to a bowl with the baking soda, vinegar and oil and mix until combined
- Add the water, baking powder and self raising flour and mix to form a smooth batter
- Stir through the berries and 3/4 of the coconut
- Place the batter into a lined loaf tin
- Add the remainder of the berries to the top along with a sprinkle of coconut
- Bake in a preheated oven at 180 for 20-25 minutes
- Leave to cool before slicing
Freezable for 3 months
