MOROCCAN SWEET POTATO
& LENTIL STEW
Vegan
Ingredients:
1/2 Sweet Potato Peeled and Cubed
50g Dried Red Lentils
1/2 Vegetable Stock Cube (low salt)
1 tsp Cumin
1 tsp Turmeric
1 tsp Coriander Seeds (ground
1/2 Bay Leaf
Handful of Cherry Tomatoes
150 ml Water
Half an Onion Chopped
Block of Frozen Spinach
Method:
- Stock, bay leaf, tomatoes, sweet potato, lentils and spinach
- Cook on a medium heat for 25 minutes
(until the potato is soft and the lentils have cooked though)
- Allow to cool slightly before serving
Freezable for 3 months
